TO-DIE-FOR CARROT CAKE *KETO*



The first bite and it tastes as Summer & Fall crashed into each other with delicious results.


It's funny because right now we're in-between seasons. While I'm anxiously waiting for Fall to arrive with its majestic grace, saying goodbye to Summer (and to its tropical flavors) is hard to accomplish.


I love recording my bakings for my youtube channel and creating the perfect carrot cake was a personal challenge for me! Even the picky eaters at home (those who wrinkle their noses at the mention of healthy, keto, low-carb, or diabetic-friendly) tasted, enjoyed and asked for more of this cake.


This is one of the moments when I cheer wildly because there's no hesitation in taking another bite. In fact, I may have to chain the refrigerator when leaving the room if I want to have some of this cake left to enjoy later!


The only thing that I -personally- would change from this amazing baking is: cutting the amount of grated carrot added by half. (Don't worry, I already adjusted it in the recipe down below). If you see the video, you'll notice I added 2 cups of grated carrots and it is amazing. But for the next time, I'll just use one.


Other than that, I wouldn't change a thing!
