One of the things I miss the most when in a low carb lifestyle is PIZZA! From time to time, we buy it from our preferred pizza store in town, but the aftermath isn't pretty awesome. I love pizza. Maybe because I love cheese! Or because I was raised eating delicious mouthwatering pizza just because.
But while I was growing in years, I was also growing around. A little over 15 years ago, I started my journey to a healthier me. I started studying what I ate, analyzing every bite, trying to understand why I gained so much weight. Soon, I discovered that my body was not very tolerant of any kind of carbohydrate. In fact, I gained A LOT of pounds when I indulged in carbs. And I also gained a lot when having regular sugar. Why? Because it is also a carb. (Sad face! I know.)
Just thinking that I needed to deprive myself of all those divine delicacies made me so sad. It was very frustrating! Wanting to eat something so delicious as pizza and then having to live the regrets and consequences.
On average, one personal pan pizza (6") have 68g of carbs. Bad carbs. So, if I was to indulge in a small pizza like that, I'll be packing carb=pounds.
I love to eat. That's no secret! But also, I love to feel my body healthy. I need to feel strong and nice and well-fed. When I eat regular pizza out there (which I do every once in a while) I feel crappy and sick and bloated. It's like having a huge rock in my stomach. Not nice at all.
For the past 15 years, I've been experimenting with flours, sugars and foods in general to achieve low carb recipes of my favorite foods.
Today, I'm happy to share with you one of my favorites! My low carb keto pizza crust! This recipe serves 2 personal pizzas. Don't worry if you only need 1. You can either make half the recipe, or freeze half of it for another time! (Believe me! Freeze it! You'll want more sooner than you can think!)
In less than 30 minutes, you'll have a homemade super delicious and healthy pizza to kill those cravings. You'll be very satisfied with its perfect pizza flavor! Just like pizza stores! Its cheezy flavor with a hint of garlic... Oh, so good! You can go over the top and brush a little garlic butter in the borders or sprinkle parmesan and parsley!
This recipe is so versatile, I've done calzone, breakfast"hot pockets", and cheezy breadsticks! I've seen thousands of recipes claiming to be the perfect low carb pizza. Some are good, others are very sad. It's pretty disappointing to try eating pizza and not be able to grab the slices in your hand, the grease of the cheese and pepperoni running across your fingers. Don't worry. My recipe won't let you down!
If you simply want some cheezy breadsticks, roll the dough and form a square. Cut in 8 identical pieces, brush the dough with garlic butter, and bake for 5-10 minutes, or until golden brown.
