Who doesn't like pineapples or glazed cherries? And who doesn't like cake? Nobody! This weekend was my hubby's birthday. He's not into birthday parties with balloons and that kind of attention, but he's definitely into ribeye and tostones, and a deliciously moist Upsidedown Pineapple Cake!
This cake is so good, like the delicious taste of summer melting in your mouth. It's so refreshing, like sipping a spirited pina colada watching a sunset in El Faro, Rincon, PR.
This dessert is pretty awesome, because it looks so cute that gives the impression to be so time-consuming. Which is not! I have done this same recipe for years and it never fails. You can divide it and make cupcakes- which are adorable! or double it for a mega big cake. The variations are endless with this delicious baby!
If you don't like pineapple, you can substitute it for any other fruit you like and it will still be awesome!
