EASY Garlic & Cheese Cauliflower Mashed

Keto, low-carb, gluten-free! If you were missing potatoes, here's your life-saver! The perfect side for every dish.

One of those pleasures of life I miss the most is creamy mashed potatoes. I grew up enjoying all sorts of things made with potatoes. French fries, baked potatoes, potato salad, and stews with potatoes.


Potatoes are great for a lot of things, like thickening! And are perfect sides for everything!


But we are not going to talk about potatoes anymore! Not today!



Since I began my journey to a happier, healthier me, I stumbled a lot with... (I know I said we were done with them but...) Potatoes! You are right! I stumbled a lot with them!


Let's be honest! Eating veggies is not something we adore, especially plain veggies.


I'm not a big fan of naked veggies! If you didn't know, naked veggies are just raw veggies or steamed veggies with nothing else to dress(ing). Don't get it wrong! Don't go by saying I said veggies are bad!



NO! Not at all!


Veggies are great but after a while (weeks, for example) of eating raw veggies or naked veggies, the taste buds become tired and bored!


Just like life, my taste buds require a little bit extra to be cheerful. Not every day always, but often!


I hope you're getting the picture! My veggies need love!


After having cauliflower rice with my flank steak, my mind began to wonder what would happen if this nice cauliflower could be turned into something else... besides a rice substitute!


That was the day that my life changed! I was ready to have some cauliflower rice but I chopped it way too much and instead of rice, it turned into a puree. It needed some help but I wasn't willing to throw it in the garbage! After all, this sad thing looked almost like mashed potatoes!


A little bit of salt, a little extra pepper, some heavy cream and it was taking shape (and nice taste already)! As I'm a cheese lover, I added a bit of extra sharp cheddar cheese, a tablespoon of butter, and processed.


The result was amazing! But that was just me, I thought! I would eat anything! So, I gathered my guinea pigs! Without them knowing, I served my family a portion of this creamy deliciousness. To make it impossible to argue, the main dish was a very tender ribeye in garlic butter!



What did the crowd say?


My daughter liked it! She said it was creamy potatoes! My son... he wouldn't eat anything he doesn't see beforehand or have tried already. Despite that pickiness, he tried it and agreed that it was an acceptable substitution.


But who surprised me was my husband. He, the potato salad lover, the one who wouldn't substitute his french fries for anything, loved it!


So, I prepare this every week with one delicious steak!


I wouldn't have thought cauliflower could be so good. It turns out this is the creamiest and super savory side I have ever had. And I love it!


Tips to make the super-easy Cheese & Garlic Cauliflower Smash


Pro Tip #1 Feel free to change the extra sharp cheddar for any other cheese you prefer.

Pro Tip #2 If you're not a cheese fan, just remove the ingredient from the recipe and reduce the heavy cream to just 1 oz.

Pro Tip #3 You can change the butter for cream cheese.

Pro Tip #4 Cauliflower comes precooked in frozen bags, so save some time and just microwave yours according to package instructions. Then toss it all in the blender and you're done! You have a 5 minutes side!


This is the perfect way to shake up your foods a little and have a nice portion of veggies!


It tastes so good you'll think it's a cheat day! (But it is not!)
