How's the summer going? How are the kids behaving?
And what about hunger? Hungriness attacks now that kids are home and you're busy working. Meanwhile, they are bored and hungry. Always. Doesn't matter that they have eaten less than an hour ago or that you have shared activities together.
I wanted to take this opportunity to share this awesomely easy recipe with you! A wonderful hybrid between a blonde brownie and a cookie packed with chocolate chips... super easy to make, healthy and delicious.
It is so easy that my kids do it by themselves from time to time!
You just need 7 ingredients to prepare this brownie cookie! Plus, I'll leave the ganache recipe link right HERE, just in case you want to put some on top!
Let's share some pro-tips for this recipe:
Pro-tip #1: Use 1 butter stick or 1/2 cup butter. If you don't have butter, substitute it with 1/2 cup coconut oil, plain Greek yogurt or sour cream.
Pro-tip #2: Don't fool yourself into thinking the amount of flour is so little. Believe me, coconut flour goes a long way! But if you don't have coconut flour, use 1/2 cup almond flour sifted.
Pro-tip #3: My favorite Brown Sugar is: Swerve Brown Sugar.
Pro-tip #4: You can prepare the ganache to put on top, or just serve with an ice cream ball and chocolate/caramel drizzles.
Pro-tip #5: Do not leave these brownies in the oven for more than 25 minutes. They will harden pretty fast. 22 minutes is a perfect time to remove from the oven.
